Serves: 8

Prep Time: 15 minutes, plus chilling

Cook Time: 25-35 minutes

  • 400g sweet pastry

  • 200g dark chocolate
  • 100g butter
  • 2 egg yolks
  • 1 whole egg
  • 25g caster sugar

  • 200g chopped dark chocolate
  • 100ml cream

  1. Pre-heat oven to 200 degrees (165-180 degrees for fan bake)
  2. Roll pastry onto a floured surface, enough to line a 25cm flan ring tin with an overlapping edge.
  3. Rest in the fridge for 15 minutes.
  4. Line pastry with baking paper and weigh it down with baking beans. Bake for 20 minutes.
  5. When the pastry is baking, melt chocolate and butter in a bowl over a pot of simmering water, whisk it until smooth. Cool slightly. Beat egg yolks, whole egg and sugar in a mixer until thick, then add in the melted chocolate and butter mixture until smooth.
  6. Take the pastry shell out of the oven and turn the oven down to 170 degrees (145-150 degrees fan bake). Remove paper, beans and cut off overlapping pastry from around the edges.
  7. Fill the pastry shell with the chocolate mixture and bake until set – approximately 10-20 minutes. The filling should feel slightly firm to touch with a light crust. Remove from the oven.

  1. To make the ganache, heat cream in a pan until it is nearly simmering and then add the chopped chocolate, whisking until smooth.
  2. Pour ganache over the chocolate tart and leave to set at room temperature.
