We know we all have our favourite tried and true recipes. Lisa who works with our marketing team has been making this ‘Never Fail Chocolate Cake’ for countless birthdays over the years. Lisa has shared her recipe below. Can you share your favourite recipe with us?
Lisa's Mocha Chocolate Cake:
2 eggs
1 ¾ cup sugar
½ cup oil
1 cup buttermilk or yogurt
1 tsp vanilla essence
Grated rind of 1 orange
2 cups flour
½ cup cocoa
2 tsp baking soda
1 tsp baking powder
1 cup strong cold coffee
Chocolate icing:
100g soft butter
1 cup icing sugar
½ cup cocoa
1 tsp vanilla essence
1 tbsp milk
1 tbsp hot coffee
Cake method:
1. Beat the first 6 ingredients in the order listed, adding one at a time
2. Sift dry ingredients and add to the wet mixture then fold in cold coffee (mixture will be sloppy)
3. Pour into a greased and floured cake tin
4. Bake at 180° C for one hour or until cooked
5. Cool before turning out and icing
Icing method:
1. Put soft butter, sugar and cocoa in a food processor and process for a few seconds
2. Add liquids and blend until well combined
